The Hunter Valley is not only renowned for its wine but has gained a reputation for producing some delectable Olives.
At Hanging Tree, we have around 250 olive trees in our grove, where we grow Manzanillo, Leccino and Kalamata fruit. After hand-picking these olives in March/April, we sit them in brine for 9 months before individually marinading each jar with dried ingredients to some classic recipes and styles.
